Greek Yogurt and Berry Parfait Recipe
Newsflash: Consuming sugary, starchy and processed foods can lead to inflammation. Since this pretty much sums up the average holiday diet, it’s a good time of year to start eating healthier, anti-inflammatory foods. Our parfait is a healthy recipe that combines plain Greek yogurt (which is higher in protein and gut-friendly probiotics—and lower in sugar—than regular yogurt) with berries, which contain an anti-inflammatory pigment called anthocyanin. This pigment, which is responsible for giving berries their vibrant color, protects against heart disease, Alzheimer’s disease and type 2 diabetes—and research published in the journal Nutrients shows that anthocyanins can increase levels of collagen and elastin in the skin, keeping it firm, smooth and radiant. The parfait is topped with a sprinkle of protein and fiber-packed almonds instead of granola for a satisfying, sugar-free crunch.
Ingredients:
3 cups plain Greek Yogurt 3 cups of fresh berries of your choice. We recommend blueberries, strawberries and raspberries. Frozen berries can also work. 4 tablespoons sliced almonds
Preparation:
Layer 1/2 cup yogurt mixture, 1/4 cup strawberries, 1/4 cup blueberries and 1/4 cup raspberries in each of 4 parfait glasses or serving bowls alternating berries and yogurt. Sprinkle each parfait with 1 tablespoon almonds. Serve immediately.
